Semolina is an Italian word which means semi-milled. Semolina is usually made from hygienically milled wheat. The consistency is usually coarsely ground and not flour-like, however this fine milled semolina is softer and has been ground down quite finely. It is Ideal for making crumbles, short crust pastry, short bread, Indian sweets (like Sooji Halwa) and semolina pudding.
